1 sleeve of buttery round crackers
8 slices of bacon

1/2 teaspoon vanilla extract
1/4 teaspoon smoked paprika
1/4 teaspoon freshly ground black pepper
A small pinch of cayenne pepper, optional
Optional Toppings
You can finish the crackers with:
A pinch of flaky sea salt
Chopped pecans or walnuts
A little extra black pepper
Crushed red pepper flakes
Finely grated Parmesan
A light drizzle of maple syrup
Step 1: Prepare the Oven and Baking Sheet
Begin by preheating your oven to 350°F (175°C).
Line a large baking sheet with parchment paper or aluminum foil. If using foil, lightly grease it to make cleanup easier.
The parchment is especially helpful because the brown sugar mixture becomes sticky as it caramelizes. It also makes it much easier to lift the finished crackers from the pan.
Step 2: Prepare the Bacon
Lay the bacon strips on a cutting board and cut them into pieces that are slightly smaller than the crackers.
Try to avoid making the pieces too large. The bacon will shrink while baking, so pieces that initially look slightly oversized will usually fit nicely after cooking.
For the best result, use regular-cut bacon rather than extremely thick bacon. Regular bacon cooks more evenly and becomes pleasantly crisp without requiring excessive baking time.
Step 3: Arrange the Crackers
Place the crackers in a single layer on the prepared baking sheet.
Arrange them close together, but don't overlap them. Keeping them in an even layer ensures that every cracker receives a good amount of the sweet topping and bacon.
If some crackers are broken, don't worry. Smaller pieces can still become delicious crunchy bites.
Step 4: Make the Candied Mixture
Place the butter in a small saucepan over medium-low heat and allow it to melt.
Once melted, add the brown sugar and maple syrup. Stir continuously until the mixture becomes smooth and the sugar begins to dissolve.
Add the vanilla extract, smoked paprika, black pepper, and cayenne pepper if you're using it.
Continue stirring for about 1–2 minutes, just until the mixture is glossy and well combined.
You don't need to cook it until it becomes a thick caramel at this stage. The oven will finish the caramelization process.
