Cheesy Beef Taco Pockets
Cheesy Beef Taco Pockets
When tacos meet warm, golden pastry, the result is these irresistible Cheesy Beef Taco Pockets. They take all the best parts of a classic taco—savory seasoned beef, melted cheese, onions, and bold Mexican-inspired spices—and tuck them inside a crisp, handheld dough pocket.
This recipe is an excellent choice for busy weeknights because the filling comes together quickly, and the pockets can be assembled ahead of time. Once baked, the outside becomes golden and lightly crisp while the inside stays warm, juicy, and packed with cheesy beef flavor.
Whether you serve them for dinner, lunch, a casual party, or game day, these taco pockets are easy to customize and fun to eat.
Ingredients
For the Beef Filling
1 pound ground beef
1 small yellow onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning
1/3 cup salsa
1/4 cup water
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 teaspoon smoked paprika, optional
Salt and black pepper, to taste
For the Pockets
1 package refrigerated pizza dough or crescent roll dough
2 tablespoons melted butter
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley, optional
For Serving
Sour cream
Salsa
Guacamole
Pico de gallo
Sliced jalapeƱos
Chopped green onions
Step 1: Cook the Ground Beef
Begin by heating a large skillet over medium heat.
Add the ground beef and break it apart with a wooden spoon. Cook for about 6–8 minutes, stirring occasionally, until the beef is completely browned.
If there is a significant amount of grease in the skillet, carefully drain the excess. Leaving a small amount behind is fine and can help keep the beef flavorful.
Step 2: Add the Aromatics
Add the diced onion to the skillet with the cooked beef.
Cook for approximately 3 minutes, or until the onion starts to soften.
Add the minced garlic and cook for another 30 seconds. The garlic should become fragrant without browning too much.
At this point, the kitchen should already start smelling like a delicious taco filling.
Step 3: Season the Beef
Sprinkle the taco seasoning over the beef mixture.
Add the salsa and water, then stir thoroughly so that the seasoning coats every bit of beef.
If you want a slightly smokier flavor, add the smoked paprika.
Reduce the heat to medium-low and allow the mixture to simmer for about 3–5 minutes.
The goal is to cook off most of the excess moisture. The finished filling should be moist and flavorful but not watery.
Taste the beef and add salt or black pepper if necessary.
Step 4: Prepare the Oven
While the beef mixture cools slightly, preheat the oven to 375°F (190°C).
Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Allowing the baking sheet to heat with the oven ensures that everything is ready when the pockets are assembled.
