Classic Southern Potato Salad

Classic Southern Potato Salad

Few side dishes are as comforting and familiar as a Classic Southern Potato Salad. Creamy, tangy, slightly sweet, and packed with tender potatoes, this traditional favorite has earned its place at cookouts, family reunions, holiday tables, and Sunday dinners.

What makes Southern potato salad so special is the balance of flavors. Tender potatoes are combined with creamy mayonnaise, yellow mustard, crunchy vegetables, and hard-boiled eggs, creating a rich but refreshing side dish. A small amount of pickle relish adds sweetness and acidity, while a sprinkle of paprika gives the finished salad its classic appearance.

The recipe is simple, but a few preparation details make a big difference. Cooking the potatoes until they are tender without letting them become waterlogged, seasoning them while they're still warm, and allowing the finished salad enough time to chill all help create a flavorful, cohesive potato salad.

Why You'll Love This Southern Potato Salad

This recipe is perfect when you need a dependable side dish that can be made ahead of time.

You'll love it because:

  • The potatoes are creamy and tender.

  • Hard-boiled eggs add richness and texture.

  • Mustard gives the dressing a classic Southern tang.

  • Pickle relish adds a subtle sweet-and-tangy flavor.

  • Celery and onion provide a pleasant crunch.

  • It tastes even better after chilling.

  • It pairs beautifully with grilled meats and sandwiches.

Ingredients

For the potato salad:

  • 2 pounds Yukon Gold or russet potatoes

  • 4 large eggs

  • 3/4 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 2 tablespoons sweet pickle relish

  • 1/4 cup finely diced celery

  • 1/4 cup finely diced yellow onion

  • 1 tablespoon pickle juice

  • 1 teaspoon sugar

  • 1/2 teaspoon salt, plus more for the potato water

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon paprika, plus extra for garnish

Optional additions:

  • 1–2 tablespoons finely chopped dill pickles

  • A small amount of chopped green onion

  • A dash of hot sauce

  • Chopped fresh parsley for garnish

Step 1: Prepare the Potatoes

Begin by washing the potatoes thoroughly.

Peel them if you prefer a completely smooth, traditional potato salad. If you're using thin-skinned Yukon Gold potatoes, you can leave some or all of the skin on for additional texture.

Cut the potatoes into evenly sized pieces, approximately 1-inch cubes.

Try to keep the pieces similar in size. This allows them to cook at roughly the same rate and prevents some pieces from becoming mushy while others remain firm.

Place the potatoes in a large pot and cover them with cold water.

Add a generous pinch of salt to the water.

Starting the potatoes in cold water allows them to heat gradually and cook more evenly.

Step 2: Cook the Potatoes

Place the pot over medium-high heat and bring the water to a gentle boil.

Once boiling, reduce the heat slightly and cook the potatoes until they are fork-tender.

This usually takes approximately 10–15 minutes, depending on the size of the pieces.

Check them frequently toward the end of cooking. A fork should slide easily into the center, but the potato should still hold its shape.

Avoid overcooking the potatoes. If they become too soft, they can break apart when mixed with the dressing and turn the salad into a mashed-potato-like mixture.

Step 3: Drain and Season the Potatoes

Once the potatoes are tender, drain them thoroughly in a colander.

Allow the excess water to evaporate for a minute or two.

While the potatoes are still warm, place them in a large mixing bowl and gently toss them with the pickle juice.

The warm potatoes absorb the liquid more effectively, giving them flavor from the inside rather than relying entirely on the dressing.

Set the potatoes aside while you prepare the eggs and dressing.
