Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon onion powder

  • 1 tablespoon fresh lemon juice

For the Salad

  • 5 cups chopped romaine lettuce or mixed greens

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • ½ small red onion, thinly sliced

  • ½ cup crumbled feta cheese

  • ½ cup Kalamata olives, sliced or left whole

  • ¼ cup chopped fresh parsley

  • ¼ cup roasted red peppers, sliced

  • ¼ cup chickpeas, drained and rinsed

  • Optional: ¼ cup toasted pita pieces or croutons

For the Dressing

  • ¼ cup extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried oregano

  • 1 small garlic clove, finely minced

  • ½ teaspoon honey

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Step 1: Prepare the Chicken

Start by preparing the chicken breasts. If they are particularly thick, gently pound them to an even thickness. This helps the chicken cook more evenly and prevents the thinner parts from drying out before the center is done.

Place the chicken in a bowl and add the olive oil, garlic powder, oregano, paprika, salt, black pepper, onion powder, and lemon juice. Rub the seasoning thoroughly over both sides of the chicken.

Allow the chicken to sit for about 10–15 minutes while you prepare the remaining ingredients. Even this short resting period gives the seasonings time to coat the meat.

Step 2: Cook the Chicken

Heat a large skillet over medium heat. Once hot, add the seasoned chicken.

Cook the chicken for approximately 5–7 minutes on the first side, depending on its thickness. Turn it over and continue cooking until the second side is golden brown and the chicken is completely cooked through.

The exact cooking time will depend on the size and thickness of the chicken. The safest way to check is with a food thermometer; the thickest part should reach 165°F (74°C).

Transfer the cooked chicken to a clean plate and let it rest for about 5 minutes. Resting allows the juices to redistribute, helping the chicken remain tender when sliced.

Once rested, cut the chicken into thin slices or bite-sized pieces.
