Lebkuchen Bars: A Soft, Spiced German-Inspired Holiday Treat
Lebkuchen Bars are a delicious way to enjoy the warm, aromatic flavors traditionally associated with German Lebkuchen without the fuss of shaping individual cookies. These bars are soft, tender, and richly spiced, with notes of cinnamon, ginger, cloves, and nutmeg. A simple sweet glaze or dusting of powdered sugar adds the perfect finishing touch.
They are especially wonderful during the colder months when the kitchen is filled with the comforting aroma of holiday spices. The bars can be prepared ahead of time, making them a convenient dessert for holiday gatherings, cookie exchanges, afternoon coffee, or simply enjoying a cozy treat at home.

For the Lebkuchen Bars
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 cup unsalted butter, softened
3/4 cup packed brown sugar
1/3 cup honey
2 large eggs
1 teaspoon vanilla extract
1/2 cup finely chopped almonds or hazelnuts
1/3 cup finely chopped candied orange peel
For the Glaze
1 1/2 cups powdered sugar
2–3 tablespoons milk or water
1/2 teaspoon vanilla extract
1 teaspoon fresh lemon juice, optional
Step 1: Prepare the Baking Pan
Begin by preheating the oven to 350°F (175°C).
Grease a 9×13-inch baking pan and line it with parchment paper, leaving some parchment hanging over the sides. This makes it much easier to lift the finished bars from the pan once they have cooled.
The parchment also helps prevent the honey-rich batter from sticking to the bottom.
Step 2: Combine the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg, and allspice.
Take a moment to mix the spices thoroughly throughout the flour. This is important because it prevents concentrated pockets of spices from appearing in the finished bars.
Set the bowl aside while you prepare the wet ingredients.
Step 3: Cream the Butter and Brown Sugar
Place the softened butter and brown sugar in a large mixing bowl.
Beat them together for about 2–3 minutes, until the mixture becomes lighter and creamy.
This step helps incorporate air into the batter and gives the bars a soft texture.
Avoid using melted butter here. Softened butter will produce a better consistency and help the batter hold its structure.
