Salted Caramel Cracker Bites are one of those simple homemade treats that deliver an irresistible combination of crunchy, buttery, sweet, and salty flavors. Crisp crackers are coated in a rich homemade caramel, baked until the caramel becomes beautifully bubbly, and finished with a delicate sprinkle of flaky salt. After cooling, the caramel sets into a crisp, glossy coating that makes every bite wonderfully satisfying.
This recipe is especially useful when you want a quick dessert that looks impressive without requiring complicated ingredients or advanced baking skills. The crackers provide a light, crispy base, while the caramel transforms them into a candy-like snack with a delicious buttery finish.
Ingredients
1 sleeve of saltine crackers, approximately 40 crackers
1 cup unsalted butter
1 cup packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon fine sea salt
1 cup semisweet chocolate chips, optional
1–2 teaspoons flaky sea salt, for finishing
Step 1: Prepare the Baking Sheet
Preheat your oven to 350°F (175°C).
Line a large rimmed baking sheet with parchment paper or aluminum foil. If using foil, lightly grease it with cooking spray or butter to make removing the finished bites easier.
Arrange the saltine crackers in a single, tightly packed layer across the baking sheet. Try to avoid leaving large gaps between the crackers so the caramel can cover them evenly.
Step 2: Make the Caramel
Place the butter and brown sugar in a medium saucepan over medium heat.
Stir continuously as the butter melts and the sugar begins to dissolve. Once the mixture comes to a gentle boil, continue cooking for about 3–4 minutes, stirring frequently.
The caramel should become smooth, glossy, and slightly thickened. Avoid cooking it for too long, because an overly dark caramel can develop a bitter flavor.
Remove the saucepan from the heat and carefully stir in the vanilla extract and fine sea salt. The mixture may bubble vigorously when the vanilla is added, so pour it in slowly and stir carefully.
Step 3: Coat the Crackers
Immediately pour the warm caramel over the crackers.
Use a heat-resistant spatula to spread the caramel gently across the entire surface. Work quickly because the caramel will begin thickening as it cools.
Make sure as many crackers as possible receive an even coating. Don't worry if some areas look slightly uneven; the caramel will spread further during baking.
