Southern Cornbread Dressing: A Comforting Classic with Deep Southern Flavor

Southern Cornbread Dressing is one of those beloved dishes that turns simple ingredients into something incredibly comforting. Made with crumbled cornbread, aromatic vegetables, savory herbs, broth, and seasonings, this classic side dish is moist and flavorful on the inside with a lightly golden top.

Unlike stuffing made primarily with cubes of white bread, Southern dressing gets its distinctive character from cornbread. It is especially popular around Thanksgiving and other family gatherings, but there is no reason to wait for a holiday to enjoy it. Served alongside roasted chicken, turkey, baked ham, or even a simple weeknight dinner, it can make an ordinary meal feel special.

The key to excellent cornbread dressing is achieving the right balance of moisture. You want the dressing to be tender and moist without becoming soggy, while the top should develop a beautiful golden crust as it bakes.

Ingredients

For the Cornbread

  • 2 cups yellow cornmeal

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1 ½ cups buttermilk

  • 2 large eggs

  • ¼ cup melted butter

  • 1 tablespoon vegetable oil

For the Dressing

  • 8 cups crumbled cornbread

  • 1 medium yellow onion, finely chopped

  • 3 celery stalks, finely chopped

  • ½ cup unsalted butter

  • 3 to 4 cups chicken broth, preferably low-sodium

  • 2 large eggs, beaten

  • 1 teaspoon dried sage

  • 1 teaspoon dried thyme

  • ½ teaspoon dried rosemary

  • ½ teaspoon black pepper

  • 1 teaspoon salt, or to taste

  • ½ teaspoon poultry seasoning

  • 2 tablespoons fresh parsley, chopped

  • Optional: 2 cups cooked shredded chicken or turkey

Step 1: Prepare the Cornbread

Start by making the cornbread that will form the foundation of the dressing.

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or a similar-sized oven-safe skillet.

In a large bowl, whisk together the cornmeal, flour, baking powder, and salt. In a separate bowl, combine the buttermilk, eggs, and melted butter.

Pour the wet ingredients into the dry ingredients and stir just until everything is combined. Avoid overmixing because doing so can make the cornbread unnecessarily dense.

Add the vegetable oil to your prepared pan and place it in the oven for a few minutes to heat. Carefully remove the pan, then pour in the cornbread batter.

Bake for approximately 20–25 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

Allow the cornbread to cool before crumbling it.

Step 2: Dry the Cornbread

For the best dressing, the cornbread should not be extremely fresh and soft.

Once it has cooled, crumble it into a large bowl using your hands. The pieces do not need to be perfectly uniform.

If you have time, let the crumbled cornbread sit uncovered for several hours or overnight. This allows it to dry slightly and gives it more ability to absorb the broth without falling apart.

If you need to make the dressing immediately, spread the crumbled cornbread onto a baking sheet and place it in a 250°F (120°C) oven for about 20–30 minutes. Stir occasionally and allow it to cool afterward.

Step 3: Sauté the Vegetables

Melt the butter in a large skillet over medium heat.

Add the chopped onion and celery. Cook for approximately 7–10 minutes, stirring occasionally, until the vegetables become tender and the onion turns translucent.

Do not rush this step. Gently cooking the vegetables allows their natural sweetness and savory flavor to develop, which becomes an important part of the finished dressing.

Once softened, remove the skillet from the heat.

Step 4: Season the Cornbread Mixture

Place the dried, crumbled cornbread into a large mixing bowl.

Add the sautéed onion and celery along with the melted butter from the skillet.

Sprinkle in the sage, thyme, rosemary, poultry seasoning, black pepper, salt, and fresh parsley.

If you're adding cooked chicken or turkey, fold it in at this stage.

Gently toss everything together so the seasonings and vegetables are distributed throughout the cornbread.

Step 5: Add the Broth

This is one of the most important steps in making Southern cornbread dressing.

Begin by adding about 3 cups of chicken broth to the cornbread mixture. Stir gently.

The mixture should become moist and soft, but it should not look like a bowl of soup. If the cornbread still appears dry, gradually add more broth a little at a time.

Remember that the dressing will continue absorbing liquid while it rests and bakes, so it is better to add broth gradually than to add too much at once.

Taste the mixture and adjust the salt and seasonings if necessary.
