For the Cake

  • 1 box yellow cake mix

  • 1 package instant vanilla pudding mix, 3.4 ounces

  • 4 large eggs

  • 1 cup sour cream

  • 1/2 cup vegetable oil

  • 1/2 cup water

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans

For the Praline Topping

  • 1/2 cup unsalted butter

  • 1 cup packed light brown sugar

  • 1/4 cup heavy cream

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans

  • Pinch of salt

Step 1: Prepare the Oven and Pan

Begin by preheating your oven to 350°F (175°C).

Grease a 9-by-13-inch baking pan generously with butter or nonstick cooking spray. Make sure to coat the corners and sides well so the finished cake releases easily.

For an especially easy cleanup, you can also line the bottom of the pan with parchment paper after greasing it.

Step 2: Prepare the Cake Batter

In a large mixing bowl, combine the yellow cake mix and instant vanilla pudding mix.

Add the eggs, sour cream, vegetable oil, water, and vanilla extract. Using an electric mixer, beat the ingredients on medium speed until the batter is smooth and well combined.

Avoid overmixing once the batter becomes smooth. Overmixing can develop too much gluten and make the cake less tender.

The sour cream and pudding mix help give this cake its particularly soft and moist texture.

Step 3: Add the Pecans

Fold the chopped pecans into the cake batter using a spatula or wooden spoon.

Make sure the pecans are distributed evenly throughout the batter. Chopping them into relatively small pieces makes it easier to get a little pecan flavor in every bite.
