Step 1: Prepare the Oven and Baking Pan

Grease an 8×8-inch or 9×9-inch baking pan well. You can also line the bottom with parchment paper, leaving a little overhang on two sides. This makes it much easier to lift the chilled bars from the pan later.

For thicker bars, an 8×8-inch pan works particularly well. If you use a larger pan, the bars will be thinner and may require slightly less baking time.

Step 2: Make the Crust

Pour the lemon cake mix into a large mixing bowl.

Add softened butter according to the cake-mix crust method you're using, then mix until the ingredients come together into a thick, crumbly dough. The mixture should be moist enough to hold together when pressed.

Transfer the mixture to your prepared baking pan.

Using your fingers, the back of a spoon, or the bottom of a measuring cup, press the mixture firmly and evenly across the bottom of the pan.

Try to create an even layer from corner to corner. A uniform crust helps the bars bake evenly and gives every slice the right balance of crust and lemon filling.

Step 3: Prepare the Lemon Filling

In a clean bowl, combine the sweetened condensed milk with the freshly squeezed lemon juice.

Stir thoroughly until the mixture becomes smooth and creamy.
