Walnut Cream Pie
Walnut Cream Pie
Walnut Cream Pie is a rich, comforting dessert that combines the buttery flavor of toasted walnuts with a smooth, creamy filling and a tender pie crust. It has the familiar coziness of a classic nut dessert, but the creamy texture gives it an especially indulgent finish.
This pie is wonderful for holidays, family dinners, Sunday gatherings, or anytime you want a dessert that feels homemade and special. Toasting the walnuts before adding them to the filling brings out their natural oils and gives the finished pie a deeper, nuttier flavor.
Ingredients
For the Pie Crust
1 unbaked 9-inch pie crust
Pie weights or dried beans, if blind-baking
For the Walnut Filling
1 1/2 cups walnut halves or pieces
3/4 cup granulated sugar
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
3 large eggs
1 cup heavy cream
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and slightly cooled
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
For the Cream Topping
1 cup cold heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Optional Garnish
Extra toasted walnuts
A light dusting of cinnamon
Caramel sauce
A few walnut halves
Step 1: Prepare the Walnuts
Begin by preheating your oven to 350°F (175°C).
Spread the walnuts in a single layer on a baking sheet. Toast them for approximately 7–10 minutes, stirring once halfway through.
Keep a close eye on them because walnuts can go from perfectly toasted to burnt quickly.
Once they smell fragrant and have darkened slightly, remove them from the oven and let them cool.
Toasting is an important step because it intensifies the natural walnut flavor and adds a pleasant roasted aroma to the pie.
Once cooled, roughly chop the walnuts. You want a mixture of smaller pieces and slightly larger chunks so that the pie has texture in every bite.
Step 2: Prepare the Pie Crust
Place the unbaked pie crust into a 9-inch pie dish.
Gently press the crust against the bottom and sides of the dish, being careful not to stretch the dough.
Trim any excess dough around the edges and crimp the rim using your fingers or a fork.
For a crispier crust, partially blind-bake it before adding the filling.
Place a sheet of parchment paper over the crust and fill it with pie weights or dried beans.
Bake for approximately 10–12 minutes.
Remove the parchment and weights, then return the crust to the oven for another 3–5 minutes, just until the surface begins to look dry.
Allow the crust to cool slightly while preparing the filling.
Step 3: Combine the Dry Ingredients
In a medium mixing bowl, combine the granulated sugar, brown sugar, flour, salt, cinnamon, and nutmeg.
Whisk everything together until the ingredients are evenly distributed.
The small amount of flour helps give the filling structure as it bakes, while the brown sugar adds a deeper caramel-like sweetness.
Set the mixture aside.
Step 4: Prepare the Cream Mixture
In a separate large bowl, whisk the eggs until they are smooth and lightly beaten.
Add the heavy cream, vanilla extract, and melted butter.
Whisk gently until everything is well combined.
Make sure the melted butter has cooled slightly before adding it. If it is extremely hot, it can partially cook the eggs.
Step 5: Combine the Filling
Gradually add the dry sugar mixture to the egg and cream mixture.
Whisk gently until there are no obvious pockets of dry ingredients.
Avoid beating the mixture too aggressively. You want a smooth filling without incorporating excessive air.
Fold in the toasted chopped walnuts, reserving a few pieces for garnish if desired.
The finished filling should be creamy, moderately thick, and packed with walnut pieces.
