4 medium-sized potatoes, peeled and diced.
1 large thinly sliced onion.
1 Lb.Of smoked Polish sausage, sliced into rounds.
3 Tbsp.Of vegetable oil or bacon fat.
Salt and pepper to taste.
Optional: chopped fresh parsley for garnish.
PREPARATION:
1st Step
Peel and dice the potatoes into bite-sized pieces, and wash them under cold water to remove excess starch.
2nd Step
In a large skillet, heat vegetable oil or bacon fat over medium heat, then add the sliced onions and sauté until they become translucent and slightly caramelized.
3rd Step
Incorporate the diced potatoes into the skillet, ensuring they are evenly coated with the oil. Season the potatoes and onions with salt and pepper to taste.
4th Step
Allow the potatoes and onions to cook undisturbed for a few minutes to develop a golden-brown crust. Stir occasionally to ensure even cooking and prevent sticking.

Add the sliced smoked Polish sausage to the skillet, distributing it evenly among the potatoes and onions. Continue cooking until the sausage rounds are browned and the potatoes are fork-tender.
