German Potato Pancakes Recipe

 


Ingredients:

2 large eggs

2 tablespoons all-purpose flour

¼ teaspoon baking powder

½ teaspoon salt

¼ teaspoon pepper

6 medium potatoes, peeled and shredded

½ cup finely chopped onion

¼ cup vegetable oil

Instructions:

Step 1

In a large bowl, beat together eggs, flour, baking powder, salt, and pepper until well combined.

Step 2

Stir in the shredded potatoes and finely chopped onion into the egg mixture.

Step 3

In a large skillet, heat vegetable oil over medium heat.

Step 4

Drop heaping tablespoonfuls of the potato mixture into the hot oil in batches, and press to flatten.

Step 5

Cook until the pancakes are browned and crisp, approximately 3 minutes on each side.

Step 6 

Transfer the cooked potato pancakes to a paper towel-lined plate to drain any excess oil.

Repeat the process with the remaining potato mixture.
