I made this recipe for the first time, and my guests couldn't wait to get seconds

 


Ingredients:


2 boneless, skinless chicken breasts, cubed.


1/3 cup of cornstarch.


1/2 tsp of garlic powder.


1/2 tsp of salt.


1/4 tsp of black pepper.


2 tbsp of olive oil.


1/2 cup of pineapple juice.


1/2 cup of ketchup.


1/4 cup of brown sugar.


2 tbsp of apple cider vinegar.


1/4 cup of diced onion.


1/4 cup of diced bell pepper.


1/4 cup of diced pineapple.


Instructions:


Step 1


To start, coat the chicken with a mixture of cornstarch, garlic powder, salt, and pepper.

Then, sauté the coated chicken in olive oil until lightly browned.

After that, combine pineapple juice, ketchup, brown sugar, and apple cider vinegar in a bowl.


Step 4


In this step, place the sautéed chicken in a baking dish.


Step 5


Next, pour the pineapple juice mixture over the chicken.


Step 6


Finally, top the mixture with diced onion, bell pepper, and pineapple.


Step 7


Bake at 375°F for 25-30 minutes or until chicken is fully cooked.

Serve over cooked rice and enjoy!


Tips:


- Cut chicken into uniform cubes for even cooking.


- Sauté chicken in batches to avoid overcrowding.


- Serve piping hot over freshly cooked rice.
