ONE-PAN MEXICAN RICE CASSEROLE

 


Ingredients:


1 pound Ground Beef


1 small Onion, diced


Salt & Pepper, to taste


2 tablespoons Taco Seasoning


1 teaspoon Garlic Powder


1 cup Long Grain White Rice


1 1/2 cups Beef Broth


1 15-ounce can Corn, drained


8 ounces Tomato Sauce


1/2 cup Salsa


1 cup Shredded Cheese


Instructions:


Step 1


In a large skillet over medium-high heat, cook ground beef and diced onion with salt and pepper until the beef is no longer pink. Drain excess grease if needed.

Return the pan to the stove, sprinkle the beef with garlic powder and taco seasoning, and stir.

Add rice, broth, corn, tomato sauce, and salsa to the pan. Bring the mixture to a boil, then cover, reduce heat, and simmer for 18-20 minutes until the rice is tender.

Top the casserole with shredded cheese, cover with the lid, and let it sit for 2-3 minutes until the cheese melts.
