STUFFED PEPPER SOUP: A COZY TWIST ON A CLASSIC DISH

 


INGREDIENTS YOU’LL NEED:

1 (450g) pound.Of ground beef or turkey.

One large chopped onion.

2 chopped bell peppers, any color.

2 garlic cloves, minced.

1 (14 oz) can.Of diced tomatoes.

1 (14 oz) can.Of tomato sauce.

4 Cups.Of beef or vegetable broth.

1 Cup.Of cooked rice (white or brown).

1 Tsp.Of dried basil.

1 Tsp.Of dried oregano.

Salt and pepper to taste.

Shredded cheese for garnish (optional).

INSTRUCTIONS:

1st Step

Cook the ground beef or ground turkey over medium heat in a large saucepan or Dutch oven until there is no longer any pink color in the meat. While it is cooking, break it up into smaller pieces. Once it's done, remove any extra fat from the pan.

2nd Step

Along with the cooked beef, put some chopped onions, chopped bell peppers, and minced garlic into the saucepan. Sauté the veggies for a few minutes, or until they reach the desired degree of tenderness, and the scent will fill the house.

3rd Step

Place the chopped tomatoes and tomato sauce in the dish. While you give it a good stir to integrate everything, give the flavors some time to come together.

4th Step

Put in the dried basil and oregano along with the beef or veggie broth. Bring the mixture to a boil over medium heat, then drop the heat to low and let it simmer for around twenty to thirty minutes to enable the flavors to meld.

5th Step

Mix in the rice that has been cooked. If you have any rice in the fridge that needs to be used up, this is an excellent method to do it.

6th Step 

Keep the soup on low heat for another 10 to 15 minutes to finish cooking the rice and blending the flavors.

7th Step

First, give it a taste, and then, if necessary, adjust the seasoning by adding more salt and pepper. Remember that certain broths may already include a significant quantity of salt in their original form.

8th Step 

Place a serving of the soup in each bowl, and if you want to add an additional layer of indulgence, you may sprinkle some shredded cheese on top.
