Mexican Taco Lasagna

 


INGREDIENTS:

12-13 soft 6-inch flour tortillas

2 lbs. ground beef

2 packets taco seasoning

2 cups diced tomatoes

1 cup diced red onions

1/2 cup diced green onions

1/4 cup chopped Jalapeños (optional)

Kosher salt (to taste)

2 cups heavy whipping cream

1/2 stick butter

3 cups shredded taco cheese or Mexican-style cheese

1.5 tsp Cajun seasoning

Sour cream (for garnish)

Diced green onions (for garnish)

INSTRUCTIONS:

In a small bowl, mix red onions, green onions, Jalapeño pepper, tomatoes, and salt to taste. Set aside.

In a large skillet, brown the ground meat and drain excess grease. Add taco seasoning and stir.

In a medium pot, bring heavy cream and butter to a boil, stirring until thickened. Remove from heat and add 2 cups of cheese. Stir in Cajun seasoning and keep warm.

In a 9 x 13 casserole dish, layer 4 tortillas (cut to fit the bottom), followed by ground beef, cheese sauce, and the tomato mixture. 

Repeat for three layers, finishing with the cheese sauce on top.

Sprinkle the remaining cup of cheese over the entire casserole.

Bake in a 400-degree oven, covered, for 20 minutes. 

Remove and let it cool. Garnish each serving with sour cream and diced green onions. Say Grace and enjoy!
