POTATO PANCAKES


 

Ingredients:


2 cups leftover mashed potatoes


1/4 cup flour


1/4 cup milk


1 beaten egg


1 tablespoon minced onion


1 tablespoon minced green pepper


Bacon drippings or cooking oil


Salt and pepper to taste (optional)


Directions:


In a bowl, mix mashed potatoes, flour, milk, egg, onions, and green peppers. Add salt and pepper if necessary.


Shape the mixture into 3-inch round patties.


Heat bacon drippings or cooking oil in a skillet.


Fry the patties until both sides are golden brown.


Drain the pancakes on paper towels and serve hot.
