Old-fashioned CUSTARD PIE

INSTRUCTIONS:

  • Preheat your oven to 375°F (190°C). To make the pie crust, combine the flour and salt in a large mixing bowl. Add the cold cubed butter and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.

  • Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Be careful not to overwork the dough. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  • Roll out the chilled dough on a lightly floured surface into a circle large enough to fit your pie dish. Carefully transfer the dough to the pie dish, trim any excess overhang, and crimp the edges as desired. Prick the bottom of the crust with a fork to prevent air bubbles from forming during baking.

  • In a mixing bowl, whisk together the eggs, granulated sugar, and salt until well combined. Heat the milk in a saucepan over medium heat until it is just about to boil. Remove from heat and slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling. Stir in the vanilla extract.

  • Pour the custard mixture into the prepared pie crust. Sprinkle the top with ground nutmeg for a classic finishing touch. Carefully transfer the pie to the preheated oven and bake for 40-45 minutes, or until the custard is set and the crust is golden brown.

  • Remove the pie from the oven and let it cool completely on a wire rack before serving. For best results, refrigerate the pie for a few hours or overnight to allow the custard to fully set.

  • Serve slices of this Old-Fashioned Custard Pie chilled or at room temperature, garnished with whipped cream or fresh berries if desired
