Easy Mexican Taco Lasagna

 



Instructions:

1. Preheat and Prepare:

  • Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or oil.

2. Cook Taco Meat:

  • In a large skillet over medium heat, cook the diced onions until softened, then add minced garlic and cook for another minute.
  • Add the ground beef to the skillet and cook until browned and cooked through, breaking it apart with a spatula. Drain any excess fat from the skillet.
  • Add taco seasoning mix and water to the skillet, stirring to combine. Simmer for a few minutes until the sauce thickens slightly. Season with salt and pepper to taste.

3. Assemble the Lasagna Layers:

  • Spread a thin layer of salsa on the bottom of the prepared baking dish. Place a layer of tortillas (you may need to cut them to fit) over the salsa, covering the bottom of the dish.
  • Spread half of the taco meat mixture over the tortillas. Sprinkle half of the drained black beans and corn over the meat layer.
  • Drizzle some salsa over the beans and corn. Sprinkle a generous amount of shredded cheese over the salsa layer.

4. Repeat Layers:

  • Repeat the layers starting with another layer of tortillas, followed by the remaining taco meat, black beans, corn, salsa, and shredded cheese.

5. Bake:

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

6. Serve and Enjoy:

  • Remove the foil from the baking dish and let the lasagna rest for a few minutes before slicing.
  • Garnish with optional toppings such as diced tomatoes, sliced olives, chopped cilantro, sour cream, or avocado slices.
