Instructions:


Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy fudge removal later.


Combine Ingredients: In a medium saucepan over medium heat, blend sugar, evaporated milk, butter, and salt. Stir until the sugar completely dissolves.


Boil: Bring the mixture to a steady boil, stirring constantly. Once boiling, lower the heat slightly but maintain a simmer for about 4-5 minutes, continuing to stir.


Off the Heat: Remove the saucepan from heat. Quickly stir in the marshmallows, chocolate chips, optional pecans, and vanilla extract.


Mix to Melt: Stir vigorously for about a minute or until the marshmallows have fully melted and the mixture is smooth.


Pour and Cool: Transfer the fudge mixture into the prepared baking dish. Optionally garnish with extra marshmallows or pecans. Allow it to cool at room temperature, then chill in the refrigerator for 2 hours or until firm.


Slice and Serve: Once set, lift the fudge out using the parchment paper overhang, cut into squares, and enjoy!


Note: Store any leftover fudge in an airtight container at room temperature for up to a week.
