INSTRUCTONS:

Step 1: Prepare the Filling

  • Heat a tablespoon of cooking oil in a large pan or wok over medium-high heat. Add minced garlic to the hot oil and stir-fry until fragrant, about 30 seconds.
  • Add shredded cabbage, carrots, mushrooms, and bamboo shoots (if using) to the pan. Stir-fry for 2-3 minutes until the vegetables are tender yet still crisp.
  • Incorporate the chopped protein (shrimp, chicken, or pork) into the vegetable mixture.

Step 2: Wrap the Egg Rolls

  • Spoon a portion of the cooled filling onto the center of the wrapper, leaving some space around the edges. Fold the bottom corner of the wrapper over the filling, tucking it snugly.

  • Heat cooking oil in a deep skillet or fryer to about 350°F (175°C). Carefully place the wrapped egg rolls in the hot oil, seam side down, in batches to avoid overcrowding.
