INSTRUCTONS:
Step 1: Prepare the Filling
- Heat a tablespoon of cooking oil in a large pan or wok over medium-high heat. Add minced garlic to the hot oil and stir-fry until fragrant, about 30 seconds.
- Add shredded cabbage, carrots, mushrooms, and bamboo shoots (if using) to the pan. Stir-fry for 2-3 minutes until the vegetables are tender yet still crisp.
- Incorporate the chopped protein (shrimp, chicken, or pork) into the vegetable mixture.
- Season the filling with soy sauce, oyster sauce (if using), salt, and pepper. Stir well to combine all ingredients evenly.
- Add chopped green onions to the filling mixture, stirring briefly until incorporated. Remove the filling from heat and let it cool completely before wrapping.
Step 2: Wrap the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond shape, with one corner pointing towards you.
- Spoon a portion of the cooled filling onto the center of the wrapper, leaving some space around the edges. Fold the bottom corner of the wrapper over the filling, tucking it snugly.
- Fold in the left and right corners towards the center, forming a compact envelope. Then dip your finger in the cornstarch-water mixture and brush it along the top corner of the wrapper.
- Roll the wrapper upwards, sealing the egg roll securely with the cornstarch-water mixture. Repeat the wrapping process with the remaining wrappers and filling.
Step 3: Fry the Egg Rolls
- Heat cooking oil in a deep skillet or fryer to about 350°F (175°C). Carefully place the wrapped egg rolls in the hot oil, seam side down, in batches to avoid overcrowding.
- Fry the egg rolls until they turn golden brown and crispy on all sides, turning occasionally for even cooking.
- Use a slotted spoon to remove the fried egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the crispy Traditional Egg Rolls hot and fresh with your favorite dipping sauce, such as sweet and sour sauce, soy sauce, or spicy mustard.
