Butter Buttermilk Biscuits: A Classic Comfort Food

Method

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This ensures the leavening agents and seasoning are evenly distributed throughout the flour.
  3. Cut in the Butter:

    • Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs. The key is to keep the butter cold, as this will create flaky layers in the biscuits.
  4. Add the Buttermilk:

    • Pour the cold buttermilk into the flour and butter mixture. Stir gently with a fork until the dough just comes together. Be careful not to overmix, as this can result in tough biscuits.
  5. Knead the Dough:

    • Turn the dough out onto a lightly floured surface. Knead it gently a few times (about 5-6 times) until it holds together. Pat the dough into a rectangle about 1/2 inch thick.
  6. Fold and Pat:

    • For extra flaky layers, fold the dough in half and pat it out again. Repeat this folding and patting process 2-3 times.
  7. Cut Out the Biscuits:

    • Using a biscuit cutter or a round cookie cutter (about 2.5 inches in diameter), cut out the biscuits. Press straight down without twisting the cutter to ensure the biscuits rise evenly. Gather the scraps, gently pat them together, and cut out additional biscuits.
  8. Bake:

    • Place the biscuits on the prepared baking sheet, leaving about 1 inch between them. Brush the tops with melted butter for a golden, flavorful finish. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
  9. Serve:

    • Remove the biscuits from the oven and let them cool slightly on a wire rack. Serve warm with butter, honey, jam, or your favorite toppings.

Tips for Perfect Biscuits

  • Cold Ingredients: Ensure your butter and buttermilk are cold. This helps create the steam needed for flaky layers.
  • Gentle Handling: Overworking the dough can result in dense biscuits. Mix and knead just enough to bring the dough together.
  • Even Thickness: Roll the dough to an even thickness to ensure uniform baking.

Variations

  • Cheese Biscuits: Add 1/2 cup of shredded cheddar cheese to the dry ingredients for cheesy biscuits.
  • Herb Biscuits: Mix in 1-2 tablespoons of chopped fresh herbs, such as rosemary or chives, for a flavorful twist.
  • Garlic Butter Biscuits: Brush the tops with garlic butter instead of plain melted butter for an extra layer of flavor.
