Chocolate Depression Cake

 


Ingredients for the Cake:


2 cups all-purpose flour


1/2 cup vegetable oil


1 1/4 cups sugar


1 1/4 cups water


1/3 cup unsweetened cocoa powder


1 tablespoon apple cider vinegar


1 tablespoon coffee (optional)


1.5 teaspoons vanilla extract


1.5 teaspoons baking soda


3/4 teaspoon salt


Ingredients for the Frosting:


3-5 cups powdered sugar


1/2 cup unsweetened cocoa powder


1/3 cup water


1/4 cup unsalted butter (1/2 stick), softened to room temperature


1 teaspoon vanilla extract


1 pinch of salt (optional)


Instructions for the Cake:


Preheat the oven to 375º F and lightly grease or butter two 9-inch cake pans.


In a large bowl, mix together the dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.


Add the wet ingredients: oil, cider vinegar, coffee (if using), and vanilla extract. Whisk until smooth.


Divide the batter equally between the prepared cake pans.

Bake for 24-30 minutes, or until a toothpick inserted into the center comes out clean.


Allow the cakes to cool completely before frosting.


Instructions for the Frosting:


While the cake is baking, mix the powdered sugar, cocoa powder, and salt (if using) in a large bowl or mixer.

Add the softened butter, water, and vanilla extract. Cream together until smooth.


Adjust the consistency of the frosting by adding more sugar or water as needed.


Once the cake is cooled, frost it as desired.
