Fresh Southern Peach Cobbler: A Delightful Southern Tradition

INSTRUCTIONS:

  1. Prepare the Peaches:

    • Preheat your oven to 375°F (190°C).
    • In a large mixing bowl, combine the sliced peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Stir to coat the peaches evenly.
    • Sprinkle the cornstarch over the peach mixture and stir until well combined. This will help thicken the peach juices as the cobbler bakes.
  2. Cook the Peach Filling:

    • Transfer the peach mixture to a large saucepan and cook over medium heat until the peaches start to release their juices and the mixture thickens slightly, about 5-7 minutes. Stir occasionally to prevent sticking.
    • Once the peaches are cooked, remove the saucepan from heat and set aside.
  3. Prepare the Batter:

    • In another mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt.
    • Gradually add the milk to the dry ingredients, stirring until just combined. Be careful not to overmix the batter.
  4. Assemble the Cobbler:

    • Pour the melted butter into a 9x13-inch baking dish, ensuring the bottom is evenly coated.
    • Pour the batter over the melted butter, but do not stir.
    • Spoon the peach mixture evenly over the batter. The batter will rise up around the peaches as it bakes, creating a delicious, cakey crust.
  5. Bake:

    • Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.
    • If the top browns too quickly, cover the cobbler loosely with aluminum foil for the last 10-15 minutes of baking.
  6. Serve:

    • Allow the cobbler to cool for about 10 minutes before serving. This helps the juices to set slightly.
    • Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.

Tips for the Perfect Peach Cobbler:

  • Peach Selection: Use ripe, fresh peaches for the best flavor. If fresh peaches are not available, you can use frozen peaches, but be sure to thaw and drain them well before using.
  • Spices: Adjust the amount of cinnamon and nutmeg to your taste. A pinch of ginger or allspice can also add a delightful twist.
  • Serving: Peach cobbler is best served warm, but it can be enjoyed cold as well. Store leftovers in the refrigerator and reheat gently before serving.

Enjoy the taste of the South with every bite!!
