Step 1: Prepare the Rice
If you don’t already have leftover rice, cook 2 cups of jasmine or basmati rice. Allow it to cool completely or refrigerate for a few hours. Cold rice ensures the grains stay separate during frying.
Step 2: Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with salt and pepper. Stir-fry until the chicken is golden brown and fully cooked (about 5-7 minutes). Remove from the skillet and set aside.
Step 3: Scramble the Eggs
In the same skillet, add a little more oil if necessary. Pour in the beaten eggs and scramble them until just set. Remove and set aside with the chicken.
Step 4: Sauté the Garlic
Add the remaining tablespoon of vegetable oil to the skillet. Toss in the minced garlic and stir-fry for 30 seconds, or until fragrant. Be careful not to burn the garlic, as it can become bitter.
Step 5: Add Vegetables and Rice
Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they’re tender but still vibrant. Then, add the cold rice, breaking up any clumps as you stir.
Step 6: Season and Combine
Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat the rice. Return the cooked chicken and scrambled eggs to the skillet. Toss everything together, ensuring all the ingredients are well mixed.
Step 7: Garnish and Serve
Sprinkle chopped green onions over the fried rice and give it a final stir. Serve hot and enjoy!

- Use Day-Old Rice: Freshly cooked rice tends to be sticky, which can make your fried rice clumpy. Day-old rice is firmer and ideal for stir-frying.

- Customize the Veggies: Swap the mixed vegetables for what you have on hand, like bell peppers, snap peas, or broccoli.
