Pineapple Quick Bread: A Tropical Delight for Every Occasion

• 2 large eggs

• 1/2 cup (120ml) vegetable oil

• 1 teaspoon vanilla extract

• 1 can (20 oz or 565g) crushed pineapple in juice, undrained

Optional: 1/2 cup shredded coconut or chopped nuts for added texture

Instructions:

Step 1: Preheat the Oven and Prepare the Pan

• Preheat your oven to 350°F (175°C).

• Grease a 9x5-inch loaf pan with a little oil or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

• In a large bowl, whisk together the flour, baking soda, baking powder, and salt.

• If you’re adding shredded coconut or nuts, mix them in now for even distribution.

Step 3: Combine the Wet Ingredients

• In a separate bowl, beat the eggs lightly, then add the sugar, oil, and vanilla extract. Whisk until well combined and slightly creamy.

• Stir in the entire can of crushed pineapple with its juice. The juice is key to making the bread incredibly moist and flavorful.

Step 4: Bring It All Together

• Gradually add the wet mixture to the dry ingredients. Use a spatula or wooden spoon to fold the ingredients gently. Be careful not to overmix — a few lumps are perfectly fine. Overmixing can make the bread dense.

Step 5: Bake to Perfection

• Pour the batter into your prepared loaf pan and smooth the top.

• Bake for about 50–60 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown, and your kitchen will be filled with a sweet tropical aroma.

Step 6: Cool and Serve

• Remove the pan from the oven and let the bread cool in the pan for about 10 minutes.

• Transfer it to a wire rack to cool completely. This step ensures the bread sets properly and slices beautifully.

Serving Suggestions:

• Serve slices plain, or spread with a bit of butter or cream cheese for extra indulgence.

• For a fancy twist, dust the top with powdered sugar or drizzle a simple glaze made from powdered sugar and pineapple juice.
