Crispy Cherry Cheesecake Egg Rolls

 


Instructions


Make the filling: In a medium bowl, beat the cream cheese, sugar, and vanilla extract together until smooth and creamy.


Assemble the egg rolls:


Place an egg roll wrapper on a clean surface in a diamond shape.


Spoon 2 tablespoons of the cream cheese mixture into the center, then add 1 tablespoon of cherry pie filling on top.


Fold the bottom corner over the filling, then fold in the sides. Roll tightly to seal, using a dab of water along the edges to help them stick.


Repeat with remaining wrappers and filling.


Air fry to perfection:


Preheat your air fryer to 375°F (190°C).


Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer.


Cook for 8–10 minutes, flipping halfway through, until golden brown and crispy.


Finish & serve:


Let cool for a few minutes, then dust with powdered sugar if desired. Serve warm and enjoy!
