In a skillet, brown the ground beef or sausage until cooked through. Drain excess grease. Stir in the marinara sauce and season to taste.
Layer the ricotta or cottage cheese over the spaghetti crust. Pour the meat sauce on top, then sprinkle generously with mozzarella.
Bake uncovered for 25–30 minutes until golden and bubbling. Let it sit for 5–10 minutes before slicing.
