Layer the Ingredients
Start by spreading the diced onion evenly over the bottom of your crock pot. Place the chicken thighs on top in a single layer. -
Make the Sauce
In a mixing bowl, combine the cream of chicken soup, cream of celery soup, poultry seasoning, parsley, and black pepper. Stir until smooth, then pour this mixture evenly over the chicken. -
Add Broth and Cook
Pour in the chicken broth, cover with the lid, and cook on high for 5 hours. Avoid opening the lid during cooking to keep the heat consistent. -
Add Vegetables and Dumplings
When there’s 1 hour left, open the lid and stir in the thawed mixed vegetables. As you stir, shred the tender chicken right in the pot.Open the can of biscuits, flatten each one slightly, and cut them into 4 long strips. Arrange the biscuit pieces on top of the chicken mixture.

Finish Cooking
Replace the lid and cook for the final hour. Once the biscuits are cooked through, gently stir them into the creamy chicken mixture to create your dumplings. -
Serve and Enjoy
Garnish with a sprinkle of fresh parsley and serve hot. It’s rich, comforting, and guaranteed to warm you from the inside out!

Want extra flavor? Add a splash of cream or a pinch of thyme in the last 30 minutes for a richer sauce.
