Crispy on the outside, gooey on the inside, and bursting with flavor — these Cheesy Baked Onion Rings are a lighter, low-carb twist on the classic fried snack. Instead of deep-frying, they’re oven-baked to golden perfection, coated in almond flour and spices, then topped with a delicious mix of mozzarella and Parmesan.

Fresh out of the oven, they disappear fast — in fact, my husband polished off six before I could even grab one!

Ingredients

  • 2 large onions, sliced into discs and separated into rings

  • 1 cup almond flour

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • ¼ teaspoon cayenne pepper

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • 2 large eggs, whisked

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese
