👩🍳 Instructions
1. Brown the Roast (Optional but Recommended)
-
Heat the olive oil in a large pan over medium-high heat.
-
Season roast lightly with salt and pepper.
-
Sear each side for 2–3 minutes until nicely browned.
-
This step boosts flavor and helps the gravy deepen in color.
-
2. Layer the Slow Cooker
-
Place the onions, carrots, potatoes, and garlic (if using) at the bottom.
-
Set the roast on top of the vegetables.
3. Mix the “Three Envelopes”
In a bowl, whisk together:

Brown gravy packet
-
Italian dressing packet
-
Beef broth
-
Worcestershire sauce
Pour the mixture evenly over the roast.
4. Slow Cook to Perfection
-
Cover and cook on LOW for 8–10 hours
OR
HIGH for 4–6 hours -
Roast is done when it easily pulls apart with a fork.
5. Serve
Shred the beef or slice it thick.
Serve with the rich gravy spooned on top, alongside the tender vegetables.
✨ Tips for the Best Three Envelope Roast
✔ Use Chuck Roast
It has the perfect marbling for slow cooking—juicy, tender, and flavorful.
✔ Don’t Add Extra Salt
The seasoning packets have plenty. Taste the gravy before adjusting.
✔ Want Thicker Gravy?
Remove ½ cup of the cooking liquid, whisk in 1 tbsp cornstarch, return to slow cooker, and cook 10 minutes on HIGH.
✔ Make It Spicy
Add 1–2 teaspoons crushed red pepper flakes or a few slices of jalapeño.
✔ Make It Creamy
Stir in ½ cup sour cream at the end for a creamy, tangy gravy twist.
