Instructions

  1. Crush the Cookies: Place the Speculoos cookies into a food processor and pulse until they form fine crumbs. Alternatively, place them in a resealable plastic bag and crush them with a rolling pin.

  2. Make the Base: In a large bowl, combine the cookie crumbs, cookie butter, and softened cream cheese. Mix with a hand mixer or a sturdy spoon until the mixture is uniform, thick, and resembles dense cookie dough.

  3. Shape the Balls: Scoop the mixture using a small cookie scoop or a measuring spoon (about 1 tablespoon per ball). Roll the mixture between your palms to form smooth, uniform spheres. Place them on a baking sheet lined with parchment paper.

  4. The Essential Chill: Place the baking sheet with the rolled balls in the freezer for at least 30 minutes or the refrigerator for 2 hours. This step is critical; chilling them prevents the balls from falling apart when they hit the warm chocolate.

  5. Melt the Chocolate: Place the melting chocolate in a deep, microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until the chocolate is completely smooth and melted. (A double boiler can also be used).

  6. Dip and Decorate: Remove the chilled balls from the freezer. Using a fork or a dipping tool, dip one ball at a time into the melted chocolate, ensuring it is fully coated. Tap the fork gently on the edge of the bowl to allow excess chocolate to drip off.

  7. Top and Set: Return the coated ball to the parchment-lined sheet. Immediately sprinkle the top with the finely chopped nuts or crushed cookies before the chocolate sets.

  8. Final Set: Repeat with the remaining balls. Allow the chocolate to set completely at room temperature or chill for 15-20 minutes.
