Step 1: Cook the Filling
In a skillet over medium heat, brown the ground beef. Drain excess grease. Add taco seasoning and water, simmering until thickened.
Step 2: Cool & Mix
Remove beef from heat and let cool slightly. Stir in cheese, beans or corn, tomatoes, and jalapeños if using.
Step 3: Assemble the Egg Rolls
Place an egg roll wrapper on a flat surface. Add 2–3 tablespoons of filling near the center. Fold in sides, roll tightly, and seal edges with water.
Step 4: Fry Until Crispy
Heat oil to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes, turning until golden brown.
Step 5: Drain & Serve
Remove and drain on paper towels. Serve hot with your favorite dipping sauces.
