Tres Leches Cake

INSTRUCTIONS:

  • 1st Step – To begin, set your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish and set aside. Meanwhile In a medium mixing bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  • 2nd Step – In a large mixing bowl, beat the egg yolks with 3/4 cup of granulated sugar until pale and fluffy. Stir in the whole milk and vanilla extract until well combined.
  • 3rd Step – Gradually add the sifted dry ingredients to the egg yolk mixture, stirring until smooth and evenly incorporated.
  • 4th Step – In a separate clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar, continuing to beat until stiff peaks form.
  • 5th Step – Gently fold the beaten egg whites into the batter until just combined, taking care not to deflate the mixture.
  • 6th Step – Pour the batter into the prepared baking dish, spreading it out evenly with a spatula. And bake the cake in the preheated oven for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • 7th Step – While the cake is baking, prepare the Tres Leches mixture by combining the sweetened condensed milk, evaporated milk, and heavy cream in a mixing bowl. Stir until well blended. Once the cake is done baking, remove it from the oven and let it cool slightly in the baking dish.
  • 8th Step – While the cake is still warm, poke holes all over the surface of the cake using a fork or skewer. Slowly pour the Tres Leches mixture over the warm cake, allowing it to absorb the liquid gradually.
  • 9th Step – Cover the cake with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cake to become fully soaked.
  • 10th Step – Before serving, garnish the Tres Leches Cake with whipped cream, fresh berries, or a sprinkle of cinnamon, if desired.
