Toffee Butterscotch Cake: A Decadent Delight

Method

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
  2. Prepare the Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the Butter and Sugars:

    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine the Wet and Dry Ingredients:

    • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
    • Fold in the butterscotch chips and toffee bits.
  5. Bake the Cakes:

    • Divide the batter evenly between the prepared cake pans and smooth the tops.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. Prepare the Butterscotch Frosting:

    • In a medium saucepan, melt the butter over medium heat. Add the brown sugar and heavy cream, stirring until the sugar is dissolved.
    • Bring the mixture to a boil, then reduce the heat and simmer for 3-4 minutes, stirring constantly.
    • Remove the saucepan from the heat and let the mixture cool for 10 minutes.
    • In a mixing bowl, gradually add the powdered sugar to the butterscotch mixture, beating until smooth. Stir in the vanilla extract and a pinch of salt.
  7. Assemble the Cake:

    • Place one of the cake layers on a serving plate or cake stand. Spread a layer of butterscotch frosting over the top.
    • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
    • Garnish with additional toffee bits and a drizzle of butterscotch, if desired.
  8. Serve:

    • Allow the frosting to set for a few minutes before slicing the cake. Serve and enjoy!

Tips for Perfect Toffee Butterscotch Cake

  • Room Temperature Ingredients: Ensure that the butter, eggs, and buttermilk are at room temperature for a smoother batter and better texture.
  • Even Layers: Use a kitchen scale to divide the batter evenly between the cake pans for uniform layers.
  • Butterscotch Chips: Lightly coat the butterscotch chips in flour before adding them to the batter to prevent them from sinking to the bottom of the cake.
